This might surprise some of you but we need fats! We need the right kinds of fats such as the healthy fats from coconut oil, organic butter, ghee (clarified butter), organic cream, animal fats (from grass-fed/pastured animals), palm oil, and extra virgin olive oil (stored in a dark glass bottle). Fats and oils provide a concentrated source of energy. They are the building blocks for our hormones. They are responsible for healthy nerve conduction and play an important role in the absorption of fat-soluble vitamins (A,D, E, and K). They are also GREAT for our skin. Too many polyunsaturated and trans fats in the diet, however, can do more harm than good. These unhealthy, so-called "heart healthy", fats include margarines and vegetable oils like corn, canola/rapeseed, walnut, cottonseed, sunflower, vegetable shortening, soy, grapeseed, and safflower.
My favorite oil? COCONUT OIL. It's gotten a bad rap because it's the most saturated fat of all oils - but it has been proven to help normalize blood lipids and protect against liver damage caused by alcohol and other toxins. It also has a lot of anti-inflammatory, anti-fungal/microbial/viral/oxidant and immune-supporting properties. Coconut oil has been proven to support the thyroid which indirectly supports and increases metabolic rate and energy level. I cook with it, add it to my hot organic coffee/tea, smoothies/shakes, and yogurt. I even use it as a skin moisturizer and natural sunblock! Plus i make my own toothpaste with it.
