Absolutely!! Below is a photo of proof that they can and do exist. They were a gift from one of my wonderful group exercise students and the recipe was inspired by one of Malika Duke's:
Ingredients: 4 eggs 1/2 cup coconut milk 1/4 tsp sea salt 1/2 tsp apple cider vinegar (optional) 2 Tbs coconut flour 3 Tbs tapioca starch *for color and a hint of flavor, add 1 tsp of cocoa powder to the batter.
Directions: 1. With an electric blender or whisk, blend together all ingredients until there are no lumps and batter is slightly bubbly.
2. Fill popover cups (or small muffin pans) about two-thirds full. Bake at 425 for about 20 minutes. Best served when hot. Like doughnuts... almost! Variation: Replace the vinegar with almond or vanilla extract and add fruit or spices for a sweeter treat. For stuffed pastries grate cheese, mince meat, crush herbs or chop sausage and place in the pan before pouring the batter over it!
